We all know the importance of healthy eating particularly for our children. Even more so now as they start back to school, and need those good foods to help them study and grow. However it’s not always easy trying to create new and exciting things for their lunchboxes, especially when we have to do it every day.
This is the first of a few helpful 'lunchbox ideas'. It's simple to make yet looks appealing and most importantly it tastes delicious.
Ingredients (enough to make four)
• 4 wheat tortillas
• 2 sweet red peppers
• 4 pineapple slices (tinned or fresh)
• 1 bunch of rocket leaves
• 100 g cream cheese
• 100 g sour cream
• Salt and pepper
• Turmeric
• 4 slices of ham
• 1 tbsp. finely chopped mint
Instructions
1. Heat tortillas (follow pack instructions). Put to one side.
2. Halve and deseed peppers. Wash and cut into strips.
3. Cut pineapple into strips.
4. Wash rocket.
5. In a small bowl, mix together cream cheese and sour cream. Add turmeric and season with salt and pepper.
6. Spread this mixture onto the tortillas and cover in rocket leaves.
7. Place a slice of ham on each of the tortillas and lay the sweet pepper and pineapple on top.
8. Sprinkle the mint all over and roll the tortillas up tightly. It is then a good idea to wrap in tin foil if being used for a packed lunch.
The only thing left is to hope your children love them as much as mine did....and I got some sneaky vegetables down them so I am happy!
